Directions:
Cut off stems and top
1/4 of artichokes.
Trim with
scissors.
Loosen and
open leaves.
Soak in a bowl
of water with the juice of 1/2 a lemon.
In a small
skillet sauté garlic and onions until just
tender, then
add the rest of the ingredients.
Mix and
remove from heat.
Drain the
artichokes and stuff with the mixture.
Put in a pan
with water 1/3 of the way up the sides.
Cover and
simmer over low heat for 30 minutes.
